Here are a few things I've been making regularly in my Instant Pot:

  • Hard-boiled eggs: Easy as pie, and they peel perfectly.
  • Rice: Bar none, the absolute best rice I've ever made. https://thetakeout.com/recipe-how-to-make-rice-in-instant-pot-1831442802
  • Thai sticky rice. While we're on the subject, it takes 20 minutes instead of two days of hassle. We eat this stuff with peanut sauce, curry, and mangoes with coconut sauce: https://www.pressurecookrecipes.com/instant-pot-sticky-rice/
  • Indian food - turns out home cooks have been making Indian food in a pressure cooker for decades. Butter chicken, Biryani, Chana dal, etc. Here's a good cookbook: https://www.amazon.com/Indian-Instant-Pot%C2%AE-Cookbook-Traditional/dp/1939754542
  • Polenta - piece of cake: cooks in 16 minutes
  • Chickpeas, beans, lentils - any dried bean. You're cutting a 3 hr process to 45 minutes; lentils take a few minutes
